Description
A crispy and flavorful Air Fryer Egg Rolls recipe that comes together in about 30 minutes, perfect for a quick weeknight dinner.
Ingredients

- 1 cup cooked and shredded chicken (or tofu for vegetarian option)
- 1 cup shredded cabbage
- 1/2 cup shredded carrots
- 1/4 cup green onions, chopped
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1/2 teaspoon ground ginger
- 8 pieces egg roll wrappers
- Cooking spray
- Salt and pepper to taste
Instructions
- In a bowl, combine chicken (or tofu), cabbage, carrots, green onions, garlic, soy sauce, sesame oil, and ginger. Season with salt and pepper.
- Lay an egg roll wrapper flat and place about 2 tablespoons of filling in the center. Fold the bottom corner over the filling, fold in the sides, and roll tightly to seal.
- Preheat the air fryer to 375°F (190°C) for 3-5 minutes.
- Spray the basket with cooking spray, place egg rolls in a single layer, and spritz the tops. Air fry for 12-15 minutes, flipping halfway through.
- Let the egg rolls cool slightly before serving with dipping sauces.
Notes
These egg rolls are customizable – use any leftover vegetables you have. They can be made in larger batches and are fridge and freezer-friendly.
