Description
A quick and easy one-pan dish featuring juicy chicken breasts topped with crispy bacon and melted Monterey Jack cheese.

- 4 chicken breasts (horizontally sliced in half)
- 6 slices of cooked bacon
- 2 cups Monterey Jack cheese
- 1/3 cup mayo
- 1 Tbsp honey
- 2 tsp stone-ground mustard
Instructions
- Slice chicken breasts in half horizontally and season both sides with salt and pepper.
- Heat olive oil in a large skillet over medium heat and cook chicken for 5-7 minutes per side until golden brown and cooked through.
- Remove chicken from the skillet and set aside.
- In the same skillet, cook bacon until crispy, about 4-5 minutes.
- In a bowl, mix mayo, honey, and stone-ground mustard with the crispy bacon bits.
- Preheat oven to 350°F. Spread the creamy sauce over each piece of chicken, add bacon, and sprinkle with cheese.
- Bake in the oven for 10-15 minutes until cheese is bubbly and golden.
- Let rest for a couple of minutes before serving with veggies or a fresh salad.
Notes
Can substitute chicken thighs for breasts. Use Swiss or cheddar cheese as alternatives. Greek yogurt can replace mayo for a lighter version.
