Description

Ingredients

  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 4 cups Vegetable Broth
  • 2 cups Potatoes, diced
  • 1 cup Heavy Cream
  • 1 cup Sweet Corn
  • 1 cup Peas
  • 2 tablespoons Butter
  • Salt and Pepper, to taste

Instructions

  1. In a large pot, melt butter over medium heat. Add chopped onion and sauté for 3-4 minutes until translucent.
  2. Add minced garlic and cook for an additional minute until aromatic.
  3. Stir in diced potatoes and cook for about 5 minutes until they start to soften.
  4. Pour in vegetable broth, bring to a simmer, and reduce heat to low. Simmer for 10-15 minutes until potatoes are fork-tender.
  5. Stir in heavy cream, corn, and peas, allowing the soup to heat through for 3-5 minutes.
  6. Season with salt and pepper to taste and simmer for an additional minute.
  7. Ladle the soup into bowls and serve warm, garnished with fresh parsley if desired.
