- 1 medium Onion, chopped
- 2 cloves Garlic, minced
- 4 cups Vegetable Broth
- 2 cups Potatoes, diced
- 1 cup Heavy Cream
- 1 cup Sweet Corn
- 1 cup Peas
- 2 tablespoons Butter
- Salt and Pepper, to taste
Instructions
- In a large pot, melt butter over medium heat. Add chopped onion and sauté for 3-4 minutes until translucent.
- Add minced garlic and cook for an additional minute until aromatic.
- Stir in diced potatoes and cook for about 5 minutes until they start to soften.
- Pour in vegetable broth, bring to a simmer, and reduce heat to low. Simmer for 10-15 minutes until potatoes are fork-tender.
- Stir in heavy cream, corn, and peas, allowing the soup to heat through for 3-5 minutes.
- Season with salt and pepper to taste and simmer for an additional minute.
- Ladle the soup into bowls and serve warm, garnished with fresh parsley if desired.
