  • 1 tsp cinnamon
  • 1/4 tsp nutmeg (optional)
  • 1/4 tsp salt (optional)
  • 1/2 medium apple, grated

Instructions

  1. Preheat the oven to 375°F (190°C) and prepare a mini muffin tin.
  2. In a large mixing bowl, whisk together the applesauce, milk, egg, melted butter, and vanilla extract.
  3. Add the flour, baking powder, cinnamon, nutmeg (if using), and salt to the bowl and whisk until just combined.
  4. Gently fold in the grated apple.
  5. Scoop the batter into the muffin tin using a tablespoon, filling each cup about 2/3 full.
