- 1/2 cup milk of choice
- 2 tbsp melted butter or oil of choice
- 1 large egg
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1 1/2 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp nutmeg (optional)
- 1/4 tsp salt (optional)
- 1/2 medium apple, grated
Instructions
- Preheat the oven to 375°F (190°C) and prepare a mini muffin tin.
- In a large mixing bowl, whisk together the applesauce, milk, egg, melted butter, and vanilla extract.
- Add the flour, baking powder, cinnamon, nutmeg (if using), and salt to the bowl and whisk until just combined.
- Gently fold in the grated apple.
- Scoop the batter into the muffin tin using a tablespoon, filling each cup about 2/3 full.
- Bake for 14-16 minutes or until a toothpick comes out clean.
- Let cool in the pan for a few minutes before transferring to a wire rack.
