- 4 slices of Bacon
- 2 tbsp Canola Oil
- 4 cups Potatoes, cut into 1-inch cubes
- 2 ½ tbsp Old El Paso™ Original Taco Seasoning Mix
- 8 Soft Corn Tortillas (6-inch)
- 8 eggs, well beaten
- ½ cup Monterey Jack Cheese, shredded
Instructions
- Preheat your oven to 400°F (200°C).
- Cook the bacon in a skillet over medium heat for about 5 minutes or until crisp, then remove.
- Add canola oil and sauté the potatoes in the skillet, cooking for about 10 minutes until golden brown.
- Add taco seasoning to the potatoes and cook for about 3 minutes.
- Warm tortillas on another skillet for about 1 minute on each side.
- Assemble tacos by adding potatoes, bacon, beaten eggs, and cheese to each tortilla, then fold.
- Bake the tacos for 5-7 minutes until the cheese is melted and bubbly.
