Description

Quick and easy breakfast tacos come together in 30 minutes, perfect for busy mornings. Customizable to suit your taste!


Ingredients

  • 4 slices of Bacon
  • 2 tbsp Canola Oil
  • 4 cups Potatoes, cut into 1-inch cubes
  • 2 ½ tbsp Old El Paso™ Original Taco Seasoning Mix
  • 8 Soft Corn Tortillas (6-inch)
  • 8 eggs, well beaten
  • ½ cup Monterey Jack Cheese, shredded

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cook the bacon in a skillet over medium heat for about 5 minutes or until crisp, then remove.
  3. Add canola oil and sauté the potatoes in the skillet, cooking for about 10 minutes until golden brown.
  4. Add taco seasoning to the potatoes and cook for about 3 minutes.
  5. Warm tortillas on another skillet for about 1 minute on each side.
  6. Assemble tacos by adding potatoes, bacon, beaten eggs, and cheese to each tortilla, then fold.
  7. Bake the tacos for 5-7 minutes until the cheese is melted and bubbly.
