Description

These Baked Bean and Cheese Burritos come together in about 30 minutes and all in one pot for a quick and easy meal that your family will love!


Ingredients

  • 16 oz can BUSH’S Traditional Refried Beans
  • 1/2 cup chunky salsa
  • 1/4 medium onion, diced
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon kosher salt (plus more to taste)
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey jack cheese
  • 4 10-inch flour tortillas

Instructions

  1. Preheat your oven to 375°F and line a small baking sheet with parchment paper.
  2. In a medium bowl, combine refried beans, salsa, diced onion, smoked paprika, garlic powder, salt, and black pepper. Stir until well combined.
  3. In another bowl, mix the shredded cheddar and Monterey jack cheese.
  4. Spread about 1/4 cup of cheese mixture onto each tortilla and add 1/2 cup of the bean mixture. Fold and roll the tortillas tightly.
  5. Place the burritos on the baking sheet and bake for 12 minutes until golden and crispy.
  6. Serve with guacamole, sour cream, and your favorite hot sauce.

Notes

These burritos are customizable; feel free to add leftover veggies or rotisserie chicken. They can be stored in the refrigerator for up to 3-4 days or frozen for up to 2 months.
