Easy Beef and Cheese Empanadas

Description

This delicious Beef and Cheese Empanadas recipe comes together in about 30 minutes, perfect for busy weeknight dinners. Customize with your favorite fillings for a comforting meal!


Ingredients

  • 1 tablespoon olive oil
  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • ½ teaspoon chili powder
  • Salt and pepper, to taste
  • 1 cup shredded cheddar cheese
  • 1 package (14 oz) refrigerated pie crusts
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large skillet, heat the olive oil over medium heat. Add chopped onion and sauté for 3-4 minutes until softened.
  3. Add minced garlic and cook for another minute until fragrant.
  4. Stir in ground beef, breaking it up as it cooks. Add cumin, paprika, chili powder, and season with salt and pepper. Cook until beef is browned, about 6-8 minutes.
  5. Remove from heat and mix in shredded cheddar cheese until melted.
  6. On a floured surface, roll out pie crusts and cut into 4-inch circles.
  7. Place a spoonful of beef mixture in the center of each circle. Fold and seal with a fork.
  8. Brush tops with beaten egg.
  9. Place the empanadas on the baking sheet and bake for 20-25 minutes until golden brown.
  10. Let cool slightly before serving.

Notes

Great for using leftovers! Freeze unbaked empanadas and bake from frozen when ready.
