Description

A quick and easy weeknight dinner, these beef taquitos are loaded with savory beef, creamy cheese, and tons of flavor!


Ingredients

  • 1 lb ground beef
  • 1 small yellow onion, chopped
  • 1 1/2 teaspoons chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 4 tablespoons cream cheese, softened and cubed
  • 1/4 cup sour cream
  • 1 cup shredded pepper jack cheese
  • 1 cup shredded cheddar cheese
  • 8 (8 inch) flour or corn tortillas
  • Vegetable oil for frying

Instructions

  1. Brown the ground beef in a large skillet over medium heat for about 5-7 minutes, breaking it up as it cooks.
  2. Add chopped onion and cook until soft and translucent, about 3-4 minutes.
  3. Reduce heat to low and stir in chili powder, smoked paprika, cumin, garlic powder, and oregano, cooking for 1 minute until fragrant.
  4. Stir in cream cheese until melted, then remove from heat and fold in sour cream and both cheeses for about 3-4 minutes.
  5. Spoon the beef mixture onto a tortilla and roll tightly, securing with a toothpick if needed. Repeat for remaining tortillas.
  6. Heat 1-1 1/2 inches of oil in a skillet and fry taquitos until golden brown, about 3-4 minutes each, working in batches.
  7. Drain on paper towel-lined plates and serve with toppings.

Notes

These taquitos can be customized with various toppings or ingredients like black beans and corn. They store well in the refrigerator for 3-4 days and can be frozen for up to 2 months.
