A quick and easy weeknight dinner, these beef taquitos are loaded with savory beef, creamy cheese, and tons of flavor!

- 1 lb ground beef
- 1 small yellow onion, chopped
- 1 1/2 teaspoons chili powder
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 4 tablespoons cream cheese, softened and cubed
- 1/4 cup sour cream
- 1 cup shredded pepper jack cheese
- 1 cup shredded cheddar cheese
- 8 (8 inch) flour or corn tortillas
- Vegetable oil for frying
Instructions
- Brown the ground beef in a large skillet over medium heat for about 5-7 minutes, breaking it up as it cooks.
- Add chopped onion and cook until soft and translucent, about 3-4 minutes.
- Reduce heat to low and stir in chili powder, smoked paprika, cumin, garlic powder, and oregano, cooking for 1 minute until fragrant.
- Stir in cream cheese until melted, then remove from heat and fold in sour cream and both cheeses for about 3-4 minutes.
- Spoon the beef mixture onto a tortilla and roll tightly, securing with a toothpick if needed. Repeat for remaining tortillas.
- Heat 1-1 1/2 inches of oil in a skillet and fry taquitos until golden brown, about 3-4 minutes each, working in batches.
- Drain on paper towel-lined plates and serve with toppings.
Notes
These taquitos can be customized with various toppings or ingredients like black beans and corn. They store well in the refrigerator for 3-4 days and can be frozen for up to 2 months.
