A hearty one-pot dish featuring black-eyed peas, smoked turkey, and flavorful spices, perfect for a comforting weeknight dinner.


Ingredients

  • 16 oz dried black-eyed peas (soaked overnight)
  • 34 smoked turkey wings
  • 1 onion (diced)
  • 2 bell peppers (diced)
  • 4 cloves garlic (minced)
  • 1 bulb roasted garlic
  • 6 cups chicken stock
  • 2 tbsp grapeseed oil
  • 1 tsp Bayou City Garlic Pepper
  • 1 tsp Bayou City All-Purpose Seasoning
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • 1/2 tsp cayenne pepper
  • Salt and black pepper to taste

Instructions

  1. Soak the beans overnight in water.
  2. Rinse the soaked peas under cold water and set aside.
  3. In a large pot, heat grapeseed oil over medium heat, then add diced onion and bell peppers; cook until the onion is translucent.
  4. Add minced garlic and roasted garlic; cook until fragrant.
  5. Add smoked turkey wings and sauté for a minute to let flavors mingle.
  6. Stir in garlic pepper, all-purpose seasoning, smoked paprika, and thyme; fold in the rinsed black-eyed peas.
  7. Pour in chicken stock and bring to a simmer; cover and let simmer for about 1 hour and 30 minutes.
  8. After 90 minutes, remove the lid and simmer for another 30 minutes or until peas are tender.
  9. Adjust consistency by mashing some peas against the pot if desired.
  10. Season with salt, black pepper, and cayenne pepper to taste.
  11. Serve hot, either on its own or over rice with cornbread.

Notes
