A delicious and easy recipe for Blueberry Overnight Oats that requires no cooking and is perfect for a quick breakfast.
Ingredients

- 2 cups blueberries
- 2 tablespoons maple syrup
- 2 cups old-fashioned rolled oats
- 4 tablespoons chia seeds
- 3 cups water or milk
- 1 cup Greek yogurt (vanilla or blueberry)
- 2–3 teaspoons vanilla extract
- 1 pinch salt
Instructions
- Heat the blueberries in a small saucepan over medium heat for about 4-5 minutes until they start to soften and release juices.
- Add 2 tablespoons of maple syrup and stir until combined and fragrant, cooking for an additional 2-3 minutes until thickened. Remove from heat and let cool.
- In a large mixing bowl, combine the old-fashioned rolled oats, chia seeds, and a pinch of salt.
- Pour in the water or milk and Greek yogurt, then add the vanilla extract. Stir until mixed well.
- Divide the oat mixture evenly into 4 mason jars or airtight containers, then top each with the blueberry mixture.
- Cover and refrigerate for at least 4 hours or overnight for best results.
- When ready to eat, stir and add any desired toppings such as fresh blueberries, yogurt, or nuts.
Notes
These overnight oats can be stored in the fridge for up to 5 days and can also be frozen for up to 3 months.
