Description

A delicious and easy recipe for Blueberry Overnight Oats that requires no cooking and is perfect for a quick breakfast.


Ingredients

  • 2 cups blueberries
  • 2 tablespoons maple syrup
  • 2 cups old-fashioned rolled oats
  • 4 tablespoons chia seeds
  • 3 cups water or milk
  • 1 cup Greek yogurt (vanilla or blueberry)
  • 23 teaspoons vanilla extract
  • 1 pinch salt

Instructions

  1. Heat the blueberries in a small saucepan over medium heat for about 4-5 minutes until they start to soften and release juices.
  2. Add 2 tablespoons of maple syrup and stir until combined and fragrant, cooking for an additional 2-3 minutes until thickened. Remove from heat and let cool.
  3. In a large mixing bowl, combine the old-fashioned rolled oats, chia seeds, and a pinch of salt.
  4. Pour in the water or milk and Greek yogurt, then add the vanilla extract. Stir until mixed well.
  5. Divide the oat mixture evenly into 4 mason jars or airtight containers, then top each with the blueberry mixture.
  6. Cover and refrigerate for at least 4 hours or overnight for best results.
  7. When ready to eat, stir and add any desired toppings such as fresh blueberries, yogurt, or nuts.

Notes

These overnight oats can be stored in the fridge for up to 5 days and can also be frozen for up to 3 months.
