Description

A creamy and comforting one-pot dish ideal for a quick weeknight dinner, packed with cheesy goodness and healthy broccoli.


Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped (about 1/2 cup)
  • 16 ounces frozen broccoli cuts
  • 1 clove garlic, chopped
  • 1/3 cup non-fat milk
  • 1 can (10 1/2 ounces) Campbell’s Heart Healthy Condensed Cheddar Cheese Soup
  • 1 1/2 cups cooked brown rice
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons shredded reduced-fat Cheddar cheese

Instructions

  1. Preheat your oven to 350°F.
  2. Heat olive oil in a 12-inch skillet over medium heat until shimmering.
  3. Add chopped onions and cook for about 3 to 5 minutes until tender-crisp.
  4. Stir in frozen broccoli and chopped garlic; cook for 4 to 5 minutes until the broccoli is tender-crisp.
  5. Pour in non-fat milk and cheddar cheese soup, then add cooked rice and mix well; cook until hot (about 3 to 5 minutes).
  6. Stir in Parmesan and shredded cheddar cheese, seasoning with salt and pepper to taste.
  7. Spoon the mixture into a 2-quart baking dish and spread evenly.
  8. Bake in the preheated oven for 20 minutes until hot and bubbly.

Notes

This dish can be customized with different veggies or proteins and can be made ahead of time and stored in the refrigerator for up to 4 days.
