This delicious Cajun Potato Soup comes together in about 30 minutes, making it a comforting and quick weeknight dinner your family will love!

- 1 lb Andouille sausage, diced
- 4 medium potatoes (russet, Yukon Gold, or red), diced
- 1 cup onions, chopped
- 1 cup bell peppers, chopped
- 1 cup celery, chopped
- 1 tsp Cajun seasoning
- 2 cups heavy cream
- 1 cup shredded cheddar cheese
- 4 cups chicken or vegetable broth
- Salt and pepper to taste
Instructions
- In a large pot over medium heat, add your diced Andouille sausage and cook for about 5-7 minutes until browned.
- Toss in your diced potatoes and chopped vegetables and cook for another 5-7 minutes until softened.
- Stir in the Cajun spices and cook for about 2 minutes until fragrant.
- Add the broth to the pot and bring it to a boil, then reduce heat and let it simmer for 15-20 minutes until the potatoes are fork-tender.
- Stir in the heavy cream and cheddar cheese until melted and combined, seasoning with salt and pepper to taste.
- Ladle into bowls and optionally sprinkle extra cheese on top before serving hot.
Notes
This soup can be customized with different vegetables and meats. Leftovers can be stored in the fridge for 3-4 days or frozen for up to 3 months.
