Description

A flavor-packed one-pot Cajun Rice dish that’s perfect for quick weeknight dinners.


Ingredients

  • 2 cups white rice
  • 4 cups chicken or vegetable broth
  • 2 tablespoons butter
  • 1 large yellow onion, chopped
  • 1 green bell pepper, chopped
  • 2 celery ribs, thinly sliced
  • 4 cloves garlic
  • 2 teaspoons smoked paprika
  • ½ teaspoon granulated garlic
  • ½ teaspoon crushed oregano
  • ¼ teaspoon crushed thyme
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon cayenne pepper (optional)
  • ½ teaspoon kosher salt (adjust to taste)
  • 1 tablespoon fresh Italian parsley, chopped (for topping)

Instructions

  1. In a medium saucepan, combine the rice and chicken broth over high heat and bring to a boil. Once boiling, reduce heat to a low simmer, cover, and let it simmer for 18-20 minutes.
  2. Melt the butter in a large skillet over medium-high heat. Add in the onion, bell pepper, and celery, and cook for about 4-5 minutes until softened and the onion is translucent.
  3. Add the garlic along with the spices: smoked paprika, granulated garlic, oregano, thyme, black pepper, cayenne, and salt. Cook for about 30 seconds until fragrant.
  4. Add the cooked rice to the skillet and stir well to combine. Sprinkle with fresh parsley before serving.
