A flavor-packed one-pot Cajun Rice dish that’s perfect for quick weeknight dinners.

- 2 cups white rice
- 4 cups chicken or vegetable broth
- 2 tablespoons butter
- 1 large yellow onion, chopped
- 1 green bell pepper, chopped
- 2 celery ribs, thinly sliced
- 4 cloves garlic
- 2 teaspoons smoked paprika
- ½ teaspoon granulated garlic
- ½ teaspoon crushed oregano
- ¼ teaspoon crushed thyme
- ½ teaspoon freshly ground black pepper
- ¼ teaspoon cayenne pepper (optional)
- ½ teaspoon kosher salt (adjust to taste)
- 1 tablespoon fresh Italian parsley, chopped (for topping)
Instructions
- In a medium saucepan, combine the rice and chicken broth over high heat and bring to a boil. Once boiling, reduce heat to a low simmer, cover, and let it simmer for 18-20 minutes.
- Melt the butter in a large skillet over medium-high heat. Add in the onion, bell pepper, and celery, and cook for about 4-5 minutes until softened and the onion is translucent.
- Add the garlic along with the spices: smoked paprika, granulated garlic, oregano, thyme, black pepper, cayenne, and salt. Cook for about 30 seconds until fragrant.
- Add the cooked rice to the skillet and stir well to combine. Sprinkle with fresh parsley before serving.
