- 1 lb boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 green bell pepper, diced
- 1 can (14 oz) white beans, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 2 cups chicken broth
- 1 tablespoon Cajun seasoning
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Sauté the Aromatics (5 minutes): In a large pot, heat the olive oil over medium heat. Add the diced onion and green bell pepper. Cook, stirring occasionally, until they become soft and the onion is translucent, about 4-5 minutes.
- Add Garlic (1 minute): Now, toss in the minced garlic and cook for about 1 minute until fragrant, don’t let it burn!
- Cook the Chicken (5-6 minutes): Cut the chicken breasts into cubes and add them to the pot. Cook until they are no longer pink, about 5-6 minutes.
- Stir in the Beans and Tomatoes (2 minutes): Next, stir in the white beans, diced tomatoes, chicken broth, Cajun seasoning, smoked paprika, and a couple pinches of salt and pepper.
- Simmer the Chili (20-25 minutes): Bring the mixture to a boil, then reduce the heat and let it simmer for 20-25 minutes.
- Serve and Garnish: Once it’s ready, serve hot, garnished with fresh cilantro.
