A swift and delicious California Roll Sushi Bowl that comes together in about 30 minutes, perfect for busy weeknights.


Ingredients

  • 2 cups sushi rice
  • 2 1/2 cups water
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1/2 pound imitation crab meat
  • 1 medium cucumber, julienned
  • 1 ripe avocado, sliced
  • 1/4 cup carrots, shredded
  • Soy sauce, for drizzling
  • Nori sheets, cut into strips (optional)
  • Sesame seeds, for garnish

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. Cook the rice in a medium saucepan with 2 1/2 cups of water until tender, about 18-20 minutes.
  3. Prepare the vinegar mixture by combining rice vinegar, sugar, and salt in a small saucepan until heated and sugar dissolves.
  4. Combine the cooked rice with the vinegar mixture, fold gently, and let it cool to room temperature.
  5. Assemble the bowls by dividing rice and topping with imitation crab, cucumber, avocado, and carrots.
  6. Finish with a drizzle of soy sauce and sprinkle with sesame seeds.
