Ingredients

- 2 cups sushi rice
- 2 1/2 cups water
- 1/4 cup rice vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
- 1/2 pound imitation crab meat
- 1 medium cucumber, julienned
- 1 ripe avocado, sliced
- 1/4 cup carrots, shredded
- Soy sauce, for drizzling
- Nori sheets, cut into strips (optional)
- Sesame seeds, for garnish
Instructions
- Rinse the rice under cold water until the water runs clear.
- Cook the rice in a medium saucepan with 2 1/2 cups of water until tender, about 18-20 minutes.
- Prepare the vinegar mixture by combining rice vinegar, sugar, and salt in a small saucepan until heated and sugar dissolves.
- Combine the cooked rice with the vinegar mixture, fold gently, and let it cool to room temperature.
- Assemble the bowls by dividing rice and topping with imitation crab, cucumber, avocado, and carrots.
- Finish with a drizzle of soy sauce and sprinkle with sesame seeds.
- Serve and enjoy!
