A delightful twist on the classic Italian dessert, these Cannoli Cookies are easy to make and perfect for satisfying your sweet cravings.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup ricotta cheese
  • 1/4 cup powdered sugar
  • 1/4 teaspoon cinnamon
  • 1/2 cup mini chocolate chips
  • 1/4 cup granulated sugar (for rolling)
  • 1 teaspoon cinnamon (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mixing the dry ingredients: whisk together flour, baking powder, and salt in a medium bowl and set aside.
  3. Cream together butter and sugar until light and fluffy, about 3-5 minutes.
  4. Add in the egg and vanilla extract, mixing until well incorporated.
  5. Combine the wet and dry ingredients, mixing until just combined.
  6. Prepare the filling by mixing ricotta, powdered sugar, cinnamon, and mini chocolate chips in a separate bowl.
  7. Form the cookie dough into 1-inch balls, then roll in the sugar and cinnamon mixture.
  8. Flatten the balls on the baking sheet with the bottom of a glass.
  9. Bake for 10-12 minutes, or until edges are lightly golden.
  10. Cool for 5 minutes then transfer to a wire rack. Spread a teaspoon of ricotta filling on the flat side of one cookie and sandwich with another.

Notes

Feel free to substitute mini chocolate chips with chopped nuts or dried fruits.
