- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup ricotta cheese
- 1/4 cup powdered sugar
- 1/4 teaspoon cinnamon
- 1/2 cup mini chocolate chips
- 1/4 cup granulated sugar (for rolling)
- 1 teaspoon cinnamon (for rolling)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mixing the dry ingredients: whisk together flour, baking powder, and salt in a medium bowl and set aside.
- Cream together butter and sugar until light and fluffy, about 3-5 minutes.
- Add in the egg and vanilla extract, mixing until well incorporated.
- Combine the wet and dry ingredients, mixing until just combined.
- Prepare the filling by mixing ricotta, powdered sugar, cinnamon, and mini chocolate chips in a separate bowl.
- Form the cookie dough into 1-inch balls, then roll in the sugar and cinnamon mixture.
- Flatten the balls on the baking sheet with the bottom of a glass.
- Bake for 10-12 minutes, or until edges are lightly golden.
- Cool for 5 minutes then transfer to a wire rack. Spread a teaspoon of ricotta filling on the flat side of one cookie and sandwich with another.
Notes
Feel free to substitute mini chocolate chips with chopped nuts or dried fruits.
