Easy Caprese Dip

Description

An incredibly delicious Caprese dip that comes together in about 35 minutes. A family-friendly delight that’s perfect for any gathering!


Ingredients

Scale
  • 2 cups cherry tomatoes
  • 1 tablespoon olive oil
  • 2 tablespoons basil pesto
  • 5 cloves garlic, minced
  • Kosher salt and black pepper to taste
  • 1 cup sour cream
  • 1/2 cup fresh chopped basil
  • 8 ounces low-moisture mozzarella cheese, cut into chunks
  • 8 ounces shredded provolone cheese
  • 1/4 cup freshly grated parmesan cheese
  • Crusty bread, crackers, or tortilla chips for serving

Instructions

  1. Preheat your oven to 400°F and adjust the rack to the middle position.
  2. Add 1 cup of whole cherry tomatoes to the bottom of a baking dish. Drizzle with olive oil, and toss in the pesto, minced garlic, and a couple pinches of salt and pepper. Stir until coated.
  3. Bake for 15 minutes.
  4. While the tomatoes are roasting, stir together the sour cream and chopped basil in a bowl.
  5. Add in the mozzarella, provolone, and parmesan to the sour cream mixture.
  6. Once the tomatoes are done, mix in the cheese mixture with the roasted tomatoes.
  7. Cut the remaining cup of tomatoes in half and arrange them on top of the mixture.
  8. Bake for another 20 minutes until the cheese is melted and golden.
  9. Top with fresh basil just before serving. Enjoy!
