Description

A delicious one-pot Chicken Kabsa that comes together in 30 minutes, perfect for a busy weeknight dinner.


Ingredients

  • 1 whole chicken or chicken pieces (thighs and drums recommended)
  • 2 cups basmati rice
  • 1 large onion, chopped
  • 2 fresh tomatoes, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 cardamom pods
  • 5 cloves
  • 1 cinnamon stick
  • 2 bay leaves
  • 4 cups chicken broth or water
  • Raisins and almonds (optional, for garnish)

Instructions

  1. Marinate the chicken with spices, garlic, ginger, and lemon juice.
  2. Prep the rice by washing and soaking it in water for 20-30 minutes.
  3. Sauté the onions in oil until translucent and brown.
  4. Add tomatoes and cook until mushy.
  5. Cook the marinated chicken until golden brown.
  6. Pour in the broth or water and add the soaked rice, then bring to a simmer.
  7. Simmer with bay leaves covered for 20 minutes.
  8. Garnish and serve with toasted almonds and raisins.
