Description

A family favorite that comes together in about 30 minutes, these Chicken Shawarma Wraps are quick, delicious, and customizable.


Ingredients

  • 3 lbs chicken thighs
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp turmeric
  • 1 tsp sugar
  • 2 tbsp tomato paste
  • 1 tbsp olive oil
  • ½ cup mayo
  • ½ cup yogurt
  • 5 cloves garlic
  • ½ lemon’s juice
  • 1 tbsp parsley
  • ½ red onion
  • 1 tbsp sumac
  • Lavash or pita bread
  • Garlic sauce
  • Harissa (optional)
  • Lettuce
  • Tomato
  • Pickles
  • French fries

Instructions

  1. Marinate the Chicken: In a large bowl, toss the chicken thighs with salt, black pepper, cumin, coriander, paprika, onion powder, turmeric, sugar, tomato paste, and olive oil. Let it marinate for at least 30 minutes in the fridge.
  2. Cook the Chicken: Heat a skillet over medium-high heat and cook the marinated chicken until fully cooked and charred, about 8 to 12 minutes per side. Remove from heat and let rest before slicing.
  3. Make the Sauce: In a separate bowl, whisk the mayo, yogurt, minced garlic, lemon juice, and parsley until smooth and creamy.
  4. Prepare the Onions: Mix sliced red onion with sumac, a pinch of lemon juice, and parsley, letting it sit for about 10 minutes.
  5. Warm the Bread: Warm lavash or pita in the skillet or microwave until soft.
  6. Assemble Your Wrap: Lay the warmed lavash or pita flat. Spread garlic sauce, add lettuce, sliced chicken, sumac onions, tomatoes, pickles, and fries. Roll tightly and enjoy!

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. The flavors improve the next day!
