Description

This delicious Chicken, Spinach, and Cheese Pasta Bake comes together in about 30 minutes and is made all in one pot for a quick and easy weeknight dinner that your family will love!


Ingredients

  • 8 ounces penne pasta
  • 3 cups chopped cooked chicken
  • 1 teaspoon olive oil
  • 1 medium onion, chopped
  • 10 ounces fresh spinach
  • 14 ounces Italian-style diced tomatoes (with juices)
  • 8 ounces cream cheese, softened
  • 1.5 cups shredded mozzarella cheese

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly oil a large baking dish.
  2. Bring a large pot of salted water to a boil, and cook the penne pasta according to the package instructions. Drain and set aside.
  3. Meanwhile, heat the olive oil in a large skillet over medium heat. Add in the chopped onion and sauté for 2-3 minutes until softened and translucent.
  4. Toss in the chopped cooked chicken and let it cook for another 2 minutes.
  5. Add the canned Italian-style diced tomatoes (with juices) and spinach, stirring until the spinach wilts down, about 3-4 minutes.
  6. Reduce the heat to low and blend in the softened cream cheese, stirring until creamy and smooth.
  7. Fold the cooked pasta into the skillet, ensuring every bite is coated with the creamy sauce.
  8. Pour the pasta mixture evenly into your prepared baking dish.
  9. Sprinkle the shredded mozzarella generously over the top.
  10. Bake for 20-25 minutes, or until the cheese is bubbly and lightly golden.
