- 8 ounces penne pasta
- 3 cups chopped cooked chicken
- 1 teaspoon olive oil
- 1 medium onion, chopped
- 10 ounces fresh spinach
- 14 ounces Italian-style diced tomatoes (with juices)
- 8 ounces cream cheese, softened
- 1.5 cups shredded mozzarella cheese
Instructions
- Preheat your oven to 375°F (190°C) and lightly oil a large baking dish.
- Bring a large pot of salted water to a boil, and cook the penne pasta according to the package instructions. Drain and set aside.
- Meanwhile, heat the olive oil in a large skillet over medium heat. Add in the chopped onion and sauté for 2-3 minutes until softened and translucent.
- Toss in the chopped cooked chicken and let it cook for another 2 minutes.
- Add the canned Italian-style diced tomatoes (with juices) and spinach, stirring until the spinach wilts down, about 3-4 minutes.
- Reduce the heat to low and blend in the softened cream cheese, stirring until creamy and smooth.
- Fold the cooked pasta into the skillet, ensuring every bite is coated with the creamy sauce.
- Pour the pasta mixture evenly into your prepared baking dish.
- Sprinkle the shredded mozzarella generously over the top.
- Bake for 20-25 minutes, or until the cheese is bubbly and lightly golden.
- Let it cool for a few minutes, then serve warm.
