Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter (melted and cooled)
  • 2 eggs (room temperature)
  • 1 tablespoon vanilla extract
  • 1 cup whole milk (room temperature)
  • 2/3 cup mashed banana (about 12 regular-sized bananas)
  • 1 cup mini chocolate chips

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. Set aside.
  2. In another bowl, whisk together the melted butter, eggs, vanilla, milk, and mashed bananas.
  3. Pour the dry ingredients into the wet ingredients and gently fold until just combined.
  4. Add the mini chocolate chips and gently fold until evenly distributed.
  5. Cover the bowl with plastic wrap and let it rest at room temperature for 30 minutes.
  6. Preheat the oven to 425°F and prepare the muffin tin.
  7. Scoop the batter into the muffin tin, filling each well to the top.
  8. Bake for 8 minutes, then reduce the oven temperature to 350°F and continue baking for another 8-10 minutes.
  9. Let the muffins cool in the pan for 20 minutes before transferring to a cooling rack.
