Description

This easy Cilantro Lime Rice comes together in about 20 minutes and is the perfect weeknight meal your family will love.


Ingredients

  • 2 cups white rice
  • 4 cups water
  • 1/4 cup fresh lime juice
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon salt

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. Combine the rinsed rice, water, and salt in a pot.
  3. Bring it to a boil over medium-high heat.
  4. Simmer on low heat, covered, for about 18-20 minutes until the rice is tender.
  5. Remove from heat and let it sit covered for another 5 minutes.
  6. Fluff the rice with a fork, then stir in the olive oil, lime juice, and chopped cilantro.
