This easy Cilantro Lime Rice comes together in about 20 minutes and is the perfect weeknight meal your family will love.
Ingredients

- 2 cups white rice
- 4 cups water
- 1/4 cup fresh lime juice
- 1/4 cup fresh cilantro, chopped
- 1 tablespoon olive oil
- 1 teaspoon salt
Instructions
- Rinse the rice under cold water until the water runs clear.
- Combine the rinsed rice, water, and salt in a pot.
- Bring it to a boil over medium-high heat.
- Simmer on low heat, covered, for about 18-20 minutes until the rice is tender.
- Remove from heat and let it sit covered for another 5 minutes.
- Fluff the rice with a fork, then stir in the olive oil, lime juice, and chopped cilantro.
Notes
This dish is great with grilled meats, tacos, or as a base for veggie bowls. It can be customized with different herbs or veggies.
