Description

Delightful little buttery cake shells that are quick and easy to make, perfect for any gathering or sweet craving.


Ingredients

  • 4 ounces unsalted butter, melted until browned
  • 2 teaspoons vanilla extract
  • 1 and 1/2 teaspoons lemon zest, finely grated
  • 1 cup all-purpose flour
  • 1 and 1/4 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3 large eggs, at room temperature
  • 3/4 cup granulated sugar
  • 1/2 cup confectioners sugar, sifted (optional)

Instructions

  1. Brown the butter in a heavy saucepan over medium heat, stirring occasionally for about 10 minutes until golden and fragrant, then cool.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. Beat eggs and gradually add sugar until the mixture thickens and turns pale, about 3-4 minutes.
  4. Gently fold in the flour mixture in three additions, then fold in the browned butter mixture.
  5. Cover and refrigerate the batter for at least 4 hours or overnight.
  6. Preheat oven to 375°F (190°C) and prepare madeleine molds with butter and flour.
  7. Scoop the chilled batter into the molds without spreading it out.
  8. Bake for about 12 minutes until golden brown and tops spring back when touched.
  9. Let cool for 5 minutes in the pan, then transfer to a wire rack and dust with confectioners’ sugar.

Notes

Best served warm and can be frozen for up to 3 months. They pair well with coffee or tea.
