Ingredients

  • 1 cup cottage cheese (I use full-fat for richness)

  • 1 cup all-purpose flour (or substitute with almond flour for low carb)

  • 2 tsp baking powder

  • ½ tsp salt

  • 1 large egg (for the dough)

  • 1 egg yolk + 1 tbsp water (for egg wash)

  • Optional: Everything bagel seasoning, sesame seeds, fresh herbs


Instructions

  • Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

  • In a bowl, whisk together flour, baking powder, and salt.

  • Stir in the cottage cheese and egg. Mix until a soft dough forms. (It’ll be sticky—just trust the process!)

  • Lightly flour your hands and divide dough into 4 equal portions.

  • Roll each portion into a rope, then form into a bagel shape and place on the baking sheet.

  • Brush with egg wash. (This gives it that golden finish!)

  • Sprinkle with toppings of choice.
