Description

These delicious cowboy cookies come together in about 30 minutes with one bowl for easy baking. Perfect for a family treat or gatherings!


Ingredients

  • 1 cup (2 sticks) butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 2 cups old-fashioned rolled oats
  • 2 cups semi-sweet chocolate chips
  • 1 cup chopped pecans (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Cream together the softened butter, granulated sugar, and brown sugar in a large mixing bowl for 2-3 minutes until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition, and stir in the vanilla extract.
  4. Whisk together the flour, baking soda, baking powder, and salt in a separate bowl, then gradually add to the wet ingredients.
  5. Fold in the oats, chocolate chips, and pecans until evenly distributed.
  6. Drop tablespoon-sized dough onto prepared sheets, spacing 2 inches apart.
  7. Bake for 10-12 minutes until edges are golden and centers look slightly underdone.
  8. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

These cookies can be frozen after baking or freeze the dough for future use.
