This delicious Cucumber Sandwich comes together in about 15 minutes and requires no cooking for a quick and easy lunch or light dinner that your family will love!

- 1 English cucumber, sliced
- 8 slices of crustless whole grain bread
- 8 oz cream cheese, softened
- 1 tablespoon fresh dill or chives, chopped
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- In a medium bowl, mix the cream cheese, dill (or chives), lemon juice, and a couple pinches of salt and pepper until well combined.
- Spread a generous layer of the cream cheese mixture on each slice of bread.
- Layer cucumber slices on half of the bread slices.
- Top with the remaining bread slices, cream cheese side down.
- Cut the sandwiches into quarters or finger shapes and serve immediately.
Notes
