Description

A super delicious and comforting dish that comes together in about 30 minutes, perfect for a weeknight dinner.


Ingredients

  • 810 corn tortillas
  • 2 cups shredded chicken
  • 2 cups mole sauce
  • ½ cup queso fresco, crumbled
  • 2 tablespoons sesame seeds

Instructions

  1. In a saucepan over medium heat, pour in the mole sauce and stir occasionally until heated through, about 5 minutes.
  2. In another skillet, warm the tortillas for about 20-30 seconds each until soft and flexible. Briefly dip each tortilla in the warm mole sauce to coat.
  3. Take a softened tortilla, add about 2 tablespoons of shredded chicken, roll it up tightly, and place it seam-side down in a serving dish. Repeat with the remaining tortillas.
  4. Cover the rolled tortillas with additional mole sauce, about another cup.
  5. Sprinkle the top with crumbles of queso fresco and sesame seeds.
  6. Optionally, bake in the oven at 350°F for about 10 minutes to warm all the flavors together before serving.
