Easy Fiesta Lime Chicken with Avocado Salsa

Description

A quick and easy grilled chicken dish marinated in lime and spices, topped with a fresh avocado salsa. Perfect for weeknight dinners!


Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 piece avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 piece lime, juiced
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, whisk together lime juice, olive oil, chili powder, garlic powder, cumin, salt, and pepper.
  2. Add the chicken breasts, coating them well, and let them marinate in the fridge for at least 15 minutes.
  3. Heat the grill or grill pan over medium-high heat.
  4. Grill the chicken for about 6-7 minutes per side, or until cooked through (juices run clear and thermometer reads 165°F).
  5. Let the chicken rest for a few minutes before slicing.
  6. In a separate bowl, combine diced avocado, cherry tomatoes, red onion, and cilantro. Add lime juice and season with salt and pepper; toss gently.
  7. Serve the sliced chicken topped with avocado salsa.

Notes

For added flavor, allow chicken to marinate longer if possible. Serve with warm tortillas or over a salad for variety.
