A quick and easy grilled chicken dish marinated in lime and spices, topped with a fresh avocado salsa. Perfect for weeknight dinners!

- 4 pieces boneless, skinless chicken breasts
- 1/4 cup lime juice
- 2 tablespoons olive oil
- 2 teaspoons chili powder
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 piece avocado, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 piece lime, juiced
- Salt and pepper to taste
Instructions
- In a medium bowl, whisk together lime juice, olive oil, chili powder, garlic powder, cumin, salt, and pepper.
- Add the chicken breasts, coating them well, and let them marinate in the fridge for at least 15 minutes.
- Heat the grill or grill pan over medium-high heat.
- Grill the chicken for about 6-7 minutes per side, or until cooked through (juices run clear and thermometer reads 165°F).
- Let the chicken rest for a few minutes before slicing.
- In a separate bowl, combine diced avocado, cherry tomatoes, red onion, and cilantro. Add lime juice and season with salt and pepper; toss gently.
- Serve the sliced chicken topped with avocado salsa.
Notes
For added flavor, allow chicken to marinate longer if possible. Serve with warm tortillas or over a salad for variety.
