Description

A comforting one-pot meal that combines ground beef, rice, and French onion flavors for a quick weeknight dinner.


Ingredients

  • 1 pound ground beef (80/20 or leaner)
  • 1 ½ cups long-grain white rice (uncooked)
  • 1 large onion, thinly sliced
  • 2 cups beef broth
  • 1 cup French onion soup (canned or homemade)
  • 1 cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • 2 tablespoons unsalted butter
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon black pepper
  • ½ teaspoon salt (adjust as needed)
  • 1 tablespoon fresh parsley (for garnish)

Instructions

  1. Melt butter in a large skillet over medium heat. Add sliced onions and a pinch of salt, sauté until soft and translucent, about 5-7 minutes.
  2. Add ground beef, cook over medium-high heat until browned, about 5-6 minutes, breaking it up as it cooks.
  3. Stir in rice, Worcestershire sauce, garlic powder, onion powder, black pepper, and more salt. Cook for another 2-3 minutes.
  4. Pour in beef broth and French onion soup. Stir, bring to a simmer, cover, and cook for about 15-20 minutes until rice is tender.
  5. Preheat oven to 350°F. Transfer mixture to a greased 9×13 inch baking dish.
  6. Sprinkle mozzarella and cheddar cheese on top. Bake uncovered for 15 minutes or until cheese is bubbly and golden.
  7. Let sit for 5 minutes, garnish with parsley before serving.

Notes

This casserole can be customized with different proteins, cheeses, or vegetables. Leftovers store well in the refrigerator or can be frozen for future meals.
