- 1 large onion (yellow preferred)
- 12 ounces smoked Polish sausage
- 3 tablespoons cooking oil (vegetable or canola)
- Salt and pepper to taste
Instructions
- Prepare the Ingredients: Wash and slice the potatoes into half-inch thick uniform pieces, thinly slice the onion, and cut the smoked sausage into bite-sized pieces.
- Heat the Oil: In a large skillet, heat the oil over medium heat until it shimmers.
- Cook the Potatoes: Add the sliced potatoes to the skillet in a single layer, cooking for 15-20 minutes without stirring until golden brown.
- Add the Onions: Toss in the sliced onions and cook for another 10 minutes, stirring occasionally until caramelized.
- Toss in the Smoked Sausage: Add the sausage to the skillet, stir, and cook for an additional 5 minutes until heated through.
