Ingredients

  • 1/3 cup heavy whipping cream
  • 1/2 tsp salt
  • 1 cup shredded mozzarella cheese
  • 1/2 cup goat cheese (optional)
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup bell pepper, diced
  • 1 cup arugula
  • 1 tbsp unsalted butter
  • Fresh herbs (optional for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, whisk together the eggs, heavy whipping cream, and salt until blended and frothy.
  3. In an oven-safe skillet over medium heat, melt the butter until bubbly.
  4. Add the diced bell pepper and halved cherry tomatoes, cooking for about 3 minutes until softened.
  5. Toss in the arugula and cook for another minute until slightly wilted.
  6. Spread the veggies evenly in the pan and pour the egg mixture over them. Sprinkle mozzarella cheese on top.
  7. Bake in the preheated oven for 15 to 17 minutes until the edges are set and the top is golden.
  8. Garnish with fresh herbs, cut into wedges, and serve warm.
