Ingredients

  • 1 lb ground chicken
  • 1/2 cup bread crumbs
  • 1/2 cup grated parmesan cheese
  • 3 cloves garlic, minced
  • 1 egg
  • 1/2 small onion, finely chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil (for greasing)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking sheet or line it with parchment paper.
  2. In a large bowl, combine ground chicken, breadcrumbs, parmesan cheese, minced garlic, egg, chopped onion, oregano, basil, salt, and pepper. Mix gently to combine.
  3. Divide the mixture into 4 portions and shape each into an oval-shaped loaf. Place on the prepared baking sheet.
  4. Bake for about 20-25 minutes, or until the internal temperature reaches 165°F (74°C).
  5. Let the meatloaves rest for a few minutes before serving. Garnish with fresh parsley or extra parmesan if desired.
