Description
A cozy and comforting Golumpki Soup made with ground turkey sausage and cabbage, all in one pot and ready in about 30 minutes.

- 1 lb Ground Italian Turkey Sausage
- 1 Medium Onion, Chopped
- 1 Small to Medium Cabbage, Cut and Diced
- 1/2 Cup Uncooked Rice
- 2–3 Tbs Minced Garlic
- 2 Tbs Tomato Paste
- 1 (28 oz) Can of Diced Tomatoes
- 1 1/2 Cups V8 Juice
- 4 Cups Beef Broth
- 1 Tbs Worcestershire Sauce
- 1 tsp Thyme
- 1 tsp Paprika
- 1 tsp Salt
- 1 tsp Pepper
Instructions
- In a stock pot, over medium heat, brown the ground turkey sausage for about 5-7 minutes until cooked through.
- Add the chopped onions and cook until soft and translucent, about 3-4 minutes.
- Stir in the diced cabbage and cook until slightly softened, about 2-3 minutes.
- Push sausage and vegetables to the pot edges and add tomato paste, cooking for 1-2 minutes until it darkens.
- Stir in diced tomatoes, V8 juice, beef broth, Worcestershire sauce, thyme, paprika, salt, and pepper. Bring to a simmer.
- Cover the pot and simmer for 25-30 minutes, or until rice is cooked and cabbage is tender.
Notes
Serve with crusty bread or grilled cheese sandwiches for dipping. Can be stored in the refrigerator for 3-4 days or frozen for up to 3 months.
