Description

A delicious, quick and easy Gozleme made right in your skillet, perfect for weeknight dinners with customizable fillings.


Ingredients

  • 2.5 cups (375g) all-purpose flour
  • 1/3 cup (85ml) extra virgin olive oil
  • 3/4 cup (185ml) water
  • 1/2 tsp salt
  • 300g (10oz) baby spinach
  • 2 garlic cloves, minced
  • 2 large eggs
  • 1 tsp black pepper
  • 300g (10oz) Danish feta
  • 2 cups (200g) shredded mozzarella cheese
  • 1 tbsp olive oil (for sautéing)
  • 1 onion, finely chopped
  • 500g (1 lb) beef or lamb mince
  • 1 capsicum/bell pepper, chopped
  • 90g (3oz) baby spinach
  • 1.5 tsp cumin powder
  • 1 tsp paprika
  • 1/2 tsp cayenne
  • 3/4 tsp salt
  • 3/4 tsp pepper
  • 1 tbsp water
  • Lemon wedges (optional, for serving)

Instructions

  1. Prepare the dough: In a large mixing bowl, combine the flour and salt. Make a well in the center, then pour in the olive oil and water. Mix until it comes together into a dough. Knead for about 5 minutes until smooth and elastic, cover and set aside.
  2. Make the spinach and feta filling: In a skillet over medium heat, add olive oil, garlic and cook until fragrant—about a minute. Add spinach; wilt down for a couple of minutes. Remove from heat and mix in eggs, feta, black pepper, and mozzarella.
  3. Prepare the lamb or beef filling: Heat olive oil in a skillet over medium heat. Sauté onion until translucent (about 3-4 minutes), add garlic until fragrant. Brown the beef or lamb, then mix in capsicum, spinach, cumin, paprika, cayenne, salt, pepper, and water. Remove from heat.
  4. Assemble the Gozleme: On a floured surface, divide the dough into balls and roll each into a thin circle. Add filling to half of the dough, fold over and seal edges by pinching.
  5. Cook: Heat a skillet over medium heat, grease lightly, cook Gozleme for about 3-5 minutes on each side until golden brown.
  6. Serve: Slice into wedges, serve warm with lemon on the side.

Notes

Customize the fillings with whatever ingredients you have on hand. Gozleme can be prepped in advance and are meal prep friendly.
