Ingredients

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 large egg
  • 1 tablespoon olive oil
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • Juice and zest of 1 lemon
  • Additional parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix ground chicken, breadcrumbs, Parmesan cheese, parsley, minced garlic, oregano, salt, pepper, and egg until well combined.
  3. Shape the mixture into 1-inch meatballs and place them on a baking sheet lined with parchment paper.
  4. Bake for 20-25 minutes, or until cooked through and golden brown.
  5. In a pot, bring chicken broth to a boil. Add orzo and cook according to package instructions until al dente, around 8-10 minutes.
  6. Once the orzo is cooked, drain any excess liquid and mix in the lemon juice and zest.
  7. Plate the orzo and top it with the baked meatballs. Garnish with additional parsley if desired.
