- 1 pound ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 large egg
- 1 tablespoon olive oil
- 1 cup orzo pasta
- 2 cups chicken broth
- Juice and zest of 1 lemon
- Additional parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, mix ground chicken, breadcrumbs, Parmesan cheese, parsley, minced garlic, oregano, salt, pepper, and egg until well combined.
- Shape the mixture into 1-inch meatballs and place them on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes, or until cooked through and golden brown.
- In a pot, bring chicken broth to a boil. Add orzo and cook according to package instructions until al dente, around 8-10 minutes.
- Once the orzo is cooked, drain any excess liquid and mix in the lemon juice and zest.
- Plate the orzo and top it with the baked meatballs. Garnish with additional parsley if desired.
