Description
A delicious Grilled Udon that comes together in about 30 minutes, perfect for a quick and easy weeknight dinner.
Ingredients
- Udon noodles
- Shrimp
- Mixed vegetables (bell peppers, carrots, broccoli)
- Soy sauce
- Mirin
- Sesame oil
- Green onions
Instructions
- Cook the udon noodles in boiling water according to package instructions, about 7-10 minutes. Drain and set aside.
- Heat a drizzle of sesame oil in a large pan or wok over medium-high heat.
- Add the shrimp and stir-fry for 3-4 minutes until pink.
- Toss in the mixed vegetables and stir-fry for another 3-4 minutes until tender-crisp.
- Bring the cooked udon noodles into the pan.
- Drizzle in the soy sauce and mirin, tossing everything together for another 2-3 minutes.
- Garnish with chopped green onions before serving.
Notes
Customize by using leftover proteins or available vegetables. Great for meal prepping!
