Description

This incredibly easy Hawaiian Carrot Pineapple Cake is a one-bowl wonder that comes together in about 30 minutes. Perfect for busy weeknight dinners!


Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ground ginger
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup grated carrots
  • 1 cup crushed pineapple, drained
  • 1/2 cup shredded coconut
  • 1/4 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour an 8-inch round or square cake pan.
  3. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  4. In a large bowl, mix together the sugar, vegetable oil, eggs, and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Fold in the grated carrots, crushed pineapple, shredded coconut, and optional nuts.
  6. Pour the batter into the prepared cake pan and smooth the top. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the cake cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Notes

Serve warm with vanilla ice cream or whipped cream. This cake can be stored in an airtight container for 5-7 days in the refrigerator.
