A quick and easy no-bake salad featuring Honeycrisp apples and broccoli, perfect for adding brightness to your table.

- 1 Honeycrisp apple, seeded and chopped into bite-sized pieces
- 1 large bunch of broccoli, chopped into florets
- ½ cup chopped red onion
- ½ cup raisins (or cranberries)
- ½ cup sunflower seeds (or nuts)
- 4 slices bacon, cooked and crumbled
- ¾ cup plain yogurt (Greek yogurt recommended)
- 2 tablespoons milk (dairy or non-dairy)
- 2 tablespoons apple cider vinegar
- ½ cup sugar (or ¼ cup honey)
- Salt & Pepper to taste
Instructions
- Prepare the Dressing: In a mason jar, combine yogurt, milk, apple cider vinegar, and sugar or honey. Secure the lid and shake to combine. Set aside in the fridge.
- Chop Your Veggies: Wash and chop the broccoli into bite-sized florets and chop the Honeycrisp apple into pieces.
- Combine the Salad Ingredients: In a large mixing bowl, combine chopped broccoli, apple, red onion, raisins, and sunflower seeds. Mix gently.
- Dress It Up: Shake the dressing again and pour it over the salad. Stir gently to combine and coat ingredients. Let it sit for 30-60 minutes.
- Crispy Bacon Time: Sprinkle crumbled bacon over the top right before serving.
Notes
Letting the salad rest allows flavors to meld. Perfect as a side or light main dish.
