Description

This delicious Cheesy Stuffed Italian Meatloaf comes together in under an hour and is baked to perfection for a quick weeknight dinner that your family will love.


Ingredients

  • 2 lbs ground beef (80/20 blend)
  • 2 large eggs
  • 1 cup Italian breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup milk
  • 3 cloves garlic, minced
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups fresh spinach, chopped
  • 2 cups shredded mozzarella cheese, divided
  • 2 cups marinara sauce, plus extra for serving
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and spray a baking dish with non-stick cooking spray.
  2. In a large bowl, combine the ground beef, eggs, breadcrumbs, Parmesan, milk, garlic, Italian seasoning, salt, and black pepper. Mix until well combined.
  3. Spread half of the meat mixture into the baking dish, shaping it into a rectangular log.
  4. Layer in 1 cup of mozzarella cheese, the chopped spinach, and 1/2 cup of marinara sauce.
  5. Cover with the remaining meat mixture and seal the edges.
  6. Spread 1/2 cup of marinara sauce over the top.
  7. Bake for 45-50 minutes until the internal temperature reaches 160°F (71°C).
  8. Five minutes before it’s done, sprinkle the remaining mozzarella over the top and bake until melted and bubbly.
  9. Let it rest for 10 minutes before slicing. Serve warm with additional marinara sauce and garnish with parsley.

Notes

Customize with leftover vegetables or herbs as desired. Great for meal prep and freezing.
