Description

This delicious Quick and Easy Japanese Beef Curry comes together in 30 minutes in one pot! A comforting meal your family will love.


Ingredients

  • 1 lb beef (chuck or stew meat), cut into bite-sized cubes
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 4 cups beef broth
  • 34 tablespoons curry powder
  • 2 tablespoons soy sauce
  • 2 tablespoons mirin
  • 1 tablespoon sugar
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  1. Heat the oil in a large pot over medium heat. Toss in the chopped onion, giving it a stir and letting it sauté until it’s translucent—it usually takes about 5 minutes.
  2. Add the beef cubes to the pot and cook until browned on all sides—this should take about 5-7 minutes.
  3. Stir in the garlic and ginger—let them mingle for about 1 minute.
  4. Add the carrots and potatoes into the mix, giving it a nice stir.
  5. Pour in the beef broth, followed by the curry powder, soy sauce, mirin, and sugar. Stir it all together until nicely combined.
  6. Bring the mixture to a boil, then reduce the heat to low. Cover and allow it to simmer for about 60 minutes.
  7. Season with a couple pinches of salt and pepper to taste!
  8. Serve this comforting curry hot over a generous scoop of cooked rice.
