This delicious Quick and Easy Japanese Beef Curry comes together in 30 minutes in one pot! A comforting meal your family will love.

- 1 lb beef (chuck or stew meat), cut into bite-sized cubes
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 potatoes, diced
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 4 cups beef broth
- 3–4 tablespoons curry powder
- 2 tablespoons soy sauce
- 2 tablespoons mirin
- 1 tablespoon sugar
- Salt and pepper to taste
- Cooked rice for serving
Instructions
- Heat the oil in a large pot over medium heat. Toss in the chopped onion, giving it a stir and letting it sauté until it’s translucent—it usually takes about 5 minutes.
- Add the beef cubes to the pot and cook until browned on all sides—this should take about 5-7 minutes.
- Stir in the garlic and ginger—let them mingle for about 1 minute.
- Add the carrots and potatoes into the mix, giving it a nice stir.
- Pour in the beef broth, followed by the curry powder, soy sauce, mirin, and sugar. Stir it all together until nicely combined.
- Bring the mixture to a boil, then reduce the heat to low. Cover and allow it to simmer for about 60 minutes.
- Season with a couple pinches of salt and pepper to taste!
- Serve this comforting curry hot over a generous scoop of cooked rice.
