  • ½ cup cake flour (fluffed, spooned, and leveled)
  • 1 tablespoon lemon zest (optional)
  • 1½ teaspoons vanilla extract (optional)
  • ⅓ cup granulated sugar
  • 2 teaspoons lemon juice
  • Powdered sugar (for dusting)
  • Apricot jam (for glazing)
  • Berries (your favorite kind)
  • Sweetened whipped cream (for serving)

Instructions

  1. Gather your baking supplies: You’ll need an 8-inch round cake pan, parchment paper, and a mixing bowl.
  2. Preheat the oven: Set it to 320°F (160°C).
  3. Cream your cheese: Beat the softened cream cheese and butter in a mixing bowl until smooth and creamy.
  4. Add the wet ingredients: Gradually mix in the heavy cream, egg yolks, lemon juice, lemon zest, and vanilla extract.
  5. Incorporate the flour: Gently sift in the cake flour while folding it into the mixture.
  6. Whip the egg whites: In a clean bowl, whip the egg whites until frothy, then gradually add sugar and whip until stiff peaks form.
  7. Fold the meringue into the cream cheese mixture in batches.
  8. Prepare the pan: Line the cake pan with parchment paper and grease the sides.
  9. Pour the batter into the prepared pan.
  10. Place the pan into a larger baking dish and fill it with hot water for a water bath.
  11. Bake for about 50-60 minutes until golden brown.
  12. Cool it down for 10-15 minutes in the oven with the door slightly cracked.
  13. Chill in the fridge for at least 4 hours before unmolding.
  14. Dust with powdered sugar and glaze with warmed apricot jam, then serve with berries and whipped cream.
