Ingredients

Scale
  • 500g chicken thighs, boneless
  • 1/4 cup soy sauce
  • 2 tablespoons sake

  2. Make the marinade by whisking together the soy sauce, sake, mirin, minced garlic, and grated ginger.
  3. Marinate the chicken pieces in the marinade for about 15 minutes.
  4. Heat oil in a deep pan or Dutch oven over medium-high heat, aiming for about 2 inches deep.
  5. Prepare the marinated chicken by dredging each piece in potato starch or cornstarch.
  6. Fry the chicken pieces in batches until golden brown and crispy, about 5-7 minutes per batch.
  7. Drain the cooked chicken on a paper towel-lined plate and serve hot with lemon wedges.

Notes

Serve with fluffy white rice and steamed vegetables for a complete meal or enjoy with dipping sauces like sweet chili or soy sauce.
