- 3/4 cup granulated sugar
- 3/4 cup light brown sugar
- 2 large eggs (at room temperature)
- 1 tablespoon vanilla extract
- Zest of 2 fresh lemons
- 1/4 cup fresh lemon juice
- 1 1/2 cups fresh or frozen blueberries
- 1/2 cup powdered sugar (optional, for glaze)
- 1–2 tablespoons fresh lemon juice (optional, for glaze)
- Reserved lemon zest (optional for glaze)
Instructions
- Preheat the oven to 350°F (175°C).
- Mix the dry ingredients: whisk together flour, baking powder, baking soda, and salt.
- Cream the butters and sugars until light and fluffy.
- Add the eggs, vanilla extract, and lemon zest, mixing until combined.
- Combine wet and dry mixtures, stirring until just combined.
- Fold in lemon juice and blueberries gently.
- Scoop dough onto a parchment-lined baking sheet, spacing each dough ball apart.
- Bake for 10-12 minutes, until edges are golden.
- Cool on the baking sheet for 5 minutes before transferring to wire racks.
- Optional glaze: whisk together powdered sugar, lemon juice, and zest; drizzle over cooled cookies.
