  • Zest of 2 fresh lemons
  • 1/4 cup fresh lemon juice
  • 1 1/2 cups fresh or frozen blueberries
  • 1/2 cup powdered sugar (optional, for glaze)
  • 12 tablespoons fresh lemon juice (optional, for glaze)
  • Reserved lemon zest (optional for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the dry ingredients: whisk together flour, baking powder, baking soda, and salt.
  3. Cream the butters and sugars until light and fluffy.
  4. Add the eggs, vanilla extract, and lemon zest, mixing until combined.
  5. Combine wet and dry mixtures, stirring until just combined.
  6. Fold in lemon juice and blueberries gently.
  7. Scoop dough onto a parchment-lined baking sheet, spacing each dough ball apart.
  8. Bake for 10-12 minutes, until edges are golden.
  9. Cool on the baking sheet for 5 minutes before transferring to wire racks.
  10. Optional glaze: whisk together powdered sugar, lemon juice, and zest; drizzle over cooled cookies.
