  • A couple dashes hot sauce
  • 2 tablespoons unsalted butter
  • 0.5 cup shredded Monterey Jack cheese
  • 2 tablespoons chopped chives
  • 3 medium avocados, thinly sliced
  • Optional toppings: pickled jalapeƱos, pickled onions, shredded cheese, sliced radish, salsa

Instructions

  1. Preheat your oven to broil. Arrange bread slices on a baking sheet, drizzle with olive oil, and broil until golden brown, about 1 minute per side.
  2. In a bowl, whisk together eggs, milk, salt, pepper, and hot sauce until fluffy.
  3. Heat a skillet over low heat, melt the butter, then add the egg mixture. Stir gently, cooking for 3-5 minutes until nearly set. Mix in cheese and chives.
