- 4 chicken thighs
- 1 cup sun-dried tomatoes
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- Place the chicken thighs in a slow cooker or large skillet and sprinkle with salt and pepper.
- In a bowl, combine sun-dried tomatoes, heavy cream, Parmesan cheese, garlic, Italian seasoning, and a dash of salt and pepper. Mix well.
- Pour the creamy mixture over the chicken, covering it completely. For a slow cooker, cook on low for 5-6 hours or on high for 3-4 hours. For stovetop, bring to a simmer and then reduce heat, cooking for 20-25 minutes.
- When done, garnish with fresh basil if desired and serve.
