- 4 flour tortillas
- 1 cup fresh spinach, chopped
- 1/2 cup shredded mozzarella cheese
- 1/2 cup crumbled feta cheese
- 1 small tomato, diced
- 1/4 cup red onion, thinly sliced
- 1 tablespoon olive oil
- Black pepper, to taste
Instructions
- Mix the filling: In a mixing bowl, combine the mozzarella cheese, feta cheese, chopped spinach, diced tomato, sliced red onion, and a couple pinches of black pepper. Stir everything together until well combined.
- Prepare the tortilla: Lay one flour tortilla flat on a clean surface. Place one-fourth of the mixture on just half of the tortilla—don’t overstuff it!
- Cook: In a non-stick skillet, heat the olive oil over medium heat. Once hot, carefully place the filled tortilla in the skillet. Cook for about 3-4 minutes until golden brown and crispy.
- Flip: Gently flip the quesadilla and cook the other side for another 3-4 minutes, or until both sides are crispy and gooey inside.
- Serve: Remove from heat. Slice into wedges and serve warm, with optional sides like salsa or Greek yogurt.
