Description
This delicious Mediterranean Tortellini Salad comes together in about 30 minutes and is perfect for a quick weeknight dinner.

- 1 package (19 ounces) frozen cheese tortellini
- 1 package (14 ounces) smoked turkey sausage, sliced
- 3/4 cup prepared pesto
- 2 cups fresh baby spinach, chopped
- 2 cups sliced baby portobello mushrooms
- 1 can (15 ounces) cannellini beans, rinsed and drained
- 1 cup roasted sweet red peppers, chopped
- 1 cup crumbled feta cheese
- 1/4 cup pitted Greek olives, sliced
Instructions
- Start by bringing a large pot of salted water to a boil. Cook the tortellini according to package directions until they float, about 3-5 minutes. Once cooked, drain and set aside.
- While the tortellini cooks, heat a large skillet over medium heat with cooking spray or olive oil. Sauté the smoked turkey sausage for 6-7 minutes until lightly browned.
- Transfer the cooked sausage to a large mixing bowl. Add the drained tortellini, 3/4 cup of pesto, and chopped spinach, stirring to coat everything with pesto.
- Fold in the sliced mushrooms, rinsed cannellini beans, roasted peppers, crumbled feta, and sliced olives. Gently toss to combine.
- Enjoy the salad warm or refrigerate for about 30 minutes to serve chilled. Letting it sit enhances the flavors.
