- 2 ¼ cups all-purpose flour
- 1 ¼ teaspoons baking powder
- ⅛ teaspoon salt
- 1 cup butter-flavored vegetable shortening
- 1 cup granulated sugar
- 1 large egg (room temperature)
- 2 teaspoons vanilla extract
- 5–6 drops pink food coloring gel (adjust to preference)
- ⅓ cup sparkling decorating sugar
Instructions
- Preheat your oven to 350°F and line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
- In a stand mixer, beat the shortening and granulated sugar on medium speed until light and fluffy, about 2-3 minutes.
- Mix in the egg and vanilla extract until fully incorporated.
- Gradually add the dry ingredients to the wet mixture in three parts, mixing on low speed until just combined.
- Add 5-6 drops of pink food coloring gel to the dough and mix until evenly colored.
- Using a medium cookie scoop, portion out dough balls (about 1½ tablespoons) and roll them into smooth spheres.
- Roll each ball in sparkling sugar and place on the prepared baking sheet 2 inches apart.
- Flatten each ball to about ¼ inch thick with the flat bottom of a glass.
- Bake for 11-12 minutes until edges are set; cool on the baking sheet for 2 minutes before transferring to a wire rack.
Notes
These cookies can be customized with different colors or flavors. They stay fresh for about 5 days in an airtight container.
