Ingredients

  • 2 ¼ cups all-purpose flour
  • 1 ¼ teaspoons baking powder
  • ⅛ teaspoon salt
  • 1 cup butter-flavored vegetable shortening
  • 1 cup granulated sugar
  • 1 large egg (room temperature)
  • 2 teaspoons vanilla extract
  • 56 drops pink food coloring gel (adjust to preference)
  • ⅓ cup sparkling decorating sugar

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a stand mixer, beat the shortening and granulated sugar on medium speed until light and fluffy, about 2-3 minutes.
  4. Mix in the egg and vanilla extract until fully incorporated.
  5. Gradually add the dry ingredients to the wet mixture in three parts, mixing on low speed until just combined.
  6. Add 5-6 drops of pink food coloring gel to the dough and mix until evenly colored.
  7. Using a medium cookie scoop, portion out dough balls (about 1½ tablespoons) and roll them into smooth spheres.
  8. Roll each ball in sparkling sugar and place on the prepared baking sheet 2 inches apart.
  9. Flatten each ball to about ¼ inch thick with the flat bottom of a glass.
  10. Bake for 11-12 minutes until edges are set; cool on the baking sheet for 2 minutes before transferring to a wire rack.

Notes
