Description

  • ½ cup cornstarch
  • ¼ teaspoon salt
  • 1 cup unsalted butter, softened
  • ½ cup powdered sugar
  • ¼ cup granulated sugar
  • 2 tablespoons fresh Meyer lemon juice
  • 1 teaspoon vanilla extract
  • Zest from 1 lemon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together flour, cornstarch, and salt.
  3. In a large mixing bowl, beat the softened butter, powdered sugar, and granulated sugar together until creamy and smooth.
  4. Add the Meyer lemon juice, vanilla extract, and lemon zest, and mix until well combined.
