- 6 mushrooms, coarsely chopped
- 1 green onion, finely chopped
- 1 clove garlic, minced
- 2 cups chicken broth (or vegetable broth for vegetarian)
- 1 cup uncooked white rice
- 0.5 teaspoon chopped fresh parsley
- Salt and pepper to taste
Instructions
- Gather all ingredients and prepare them.
- Melt the butter in a saucepan over medium heat.
- Cook the mushrooms, green onion, and garlic in the butter until the mushrooms release their juices, about 5 minutes.
- Stir in the chicken broth and rice, season with parsley, and add salt and pepper to taste.
- Bring to a boil, then reduce heat, cover, and simmer until liquid is absorbed and rice is fluffy, about 20 minutes.
- Fluff with a fork, adjust seasoning if necessary, and serve.
